Humming Gnocchi

Last night the class hummed along. We made homemade gnocchi and tomato sauce and it was amazing. I'm going out this morning to get baking potatoes so I can practice making it again this morning. Wow. This homework is terrible. : )

Dreaming

My dreams, lately, have been about dicing potatoes and carrots. Last night I had a dream that I owned a store front in Historic Roswell. There were more tables in the dream than I anticipate, but nonetheless, it was mine and there was a line of people outside waiting to come in. I yelled at the cook (who will be me, of course) who dipped his grilled sandwich in the massive pot of soup that was to be serving everyone. We all know this is not sanitary. ; )

Exciting Brainstorming

Ideas were flowing today. What type of establishment do I want to own? Where? What hours? I know I want the hours to be breakfast and lunch, closed at 2 to get the kids off the bus. What type of food? Breakfast and Lunch. Style????

Long Lost Update

I realize weeks have gone by without a post. Yesterday was my one month 'anniversary' of not going to a paying job every day. I have never been so relaxed and so happy. Here's what's going on. I worked with a career coach a few weeks ago. It was a very intense few days and what came of that is.. I've always wanted to own my own cafe or something, so what was I waiting for? So I decided not to wait any longer. There is no reason not to do it now.

So I called the Art Institute of Atlanta to inquire about their culinary program. I met with Admissions, filed the financial aid paperwork, filled out the application, wrote my essay, blah, blah, blah. I was accepted on a Wednesday and Admissions said I could start the new quarter on Monday. MONDAY??? So I did. I never really took any time to lounge around the pool and eat bon bons, but this is GREAT. I'm going full time at night, Tuesday through Friday, 6-10 pm. I am taking three classes and will be done in January. I'll have a Diploma in Culinary Arts Skills, and because I already have a BFA, that's all I'll need for what I'd like to do.

So there has been quite a bit of adjusting in our house. Adjusting to me being home during the day, gone at night, Jason being able to do other work during the day, me figuring out studying, homework (like cutting up carrots and potatoes in the exact dimensions required) and how to go to bed when I get home at 10:30 instead of staying up and making soups. : )

Today I made New England Clam Chowder and Sweet Potato Muffins with a Cream Cheese Maple spread.

I will try to do better at keeping up with the blog, and it is very likely to turn out more like notes from what I've learned. My new Journey has begun and it tastes great!!!

Thank you to everyone who has helped me to get to this place. Especially Jason. I could never have done this without you.
